Chicken Crust Pizza!

If you stick with us for a bit on the blog you will notice that I seem to teeter day to  day between eating low-carb and eating all the carbs! Here is a recipe I love for one of those “low-carb day”! I love pizza and since discovering this recipe a few months ago…I love that I can have pizza with the fam and not feel all the guilt…..

Ingredients:

1 can of chicken ( I like the large cans of costco-kirkland brand)

1 egg

1-2 tablespoons of parmesan cheese

Pizza toppings of your choice

How to:

Pre-heat oven to 350 degrees. Drain the can of chicken and spread on to baking sheet,  bake for 10 minutes to dry out the chicken. I was making two crusts here, so I had two cans of chicken.

Once chicken is done baking, remove and place in a mixing bowl. I place a bit of the chicken in a bowl to use as topping on my pizza.  Increase heat of oven to 500 degrees. Add cheese and egg to the bowl and mix.

Pour mixture onto baking sheet lined with parchment paper and spread thin.

Bake the crust for 8-10 minutes at 500 degrees.

Remove crust and add toppings! Cook for an additional 6-10 minutes.

Yum!
