Our Dinners for the Next Two Weeks (October 14th)

Every 2 weeks I create what I call a “Meal Plan”. I go through all my recipe sources, cookbooks, personal lists, Pinterest and my app Copy Me That and pick 8-10 meals for next 2 weeks. Yes, I realize that there are more than 8-10 nights in 2 weeks however we eat leftovers some nights, maybe my husband and I will have date night another and then there is also a night for Pizza so 8-10 usually gets us through 2 weeks. Also we don’t schedule dinners for certain nights ahead of time because with 3 kids under 4 our lives are pretty crazy and you never know what’s going to happen day to day. If you haven’t seen my meal plans before you should know my husband and I mostly follow Keto. If the recipes below call for rice we use cauliflower, if it calls for flour we use almond, if it calls for pasta my husband and I just eat the meat and our kids eat the pasta.

*Last week in the meal plan for September 30th I had a Low-Carb pizza, I hadn’t made it yet but did last week.  It was awful. I apologize in advance if you made it. I try and make sure to test all these recipes before I add them to my meal plan for you but sometimes I just run out of time. So again, so sorry! With that being said there are 2 NEW recipes this week that I have NOT made yet. The “Egg Roll in a Bowl” and the “Stuffed Chicken Breast”. Hopefully they are a HIT.

Here are the dinners I picked this time. If you click on the dinner below it will take you to the recipe.

Cheesy Mexican Chicken Skillet

30 Minute Meatballs

Cilantro Lime Chicken

Egg Roll in a Bowl

Perfect Salmon

Creamy Garlic Mushroom Chicken

Stuffed Chicken Breasts

Just like the Real Thing- Low Carb Keto Lasagna

Instant Pot -Pot Roast

PRINTABLE SHOPPING LIST: HERE

I haven’t done my shopping yet so I am not sure about the total but it usually is around $150 (this week may be more because of the roast)  for everything.  Let me know if you have any questions! I would be happy to help!
